An emblematic address in the historic heart of the city, the Grand Hôtel de Castres is now unveiling a renewed interpretation of its interior spaces. Led by architect Arnaud Doat, the renovation does not seek to erase the hotel’s past, but rather to reveal it through a contemporary, measured and context-driven design language. The project is rooted in continuity, allowing architecture and heritage to engage in dialogue, restoring the Grand Hôtel as a vibrant place to live, welcoming both travelers and local residents.
At the heart of this transformation, the restaurant has been conceived as a central gathering space, balancing conviviality, elegance and everyday use. Material choices play a defining role, not only for their visual presence but also for their ability to meet the technical demands of a hotel environment.
The bar, a strong identity shaped by color and depth
In the bar area of the restaurant, the eye is immediately drawn to Silestone Parisien Bleu, used for the bar counter and table tops. Its deep, nuanced tone brings a graphic and contemporary character to the space, while engaging in a subtle dialogue with the existing architecture and the bespoke furniture designed by the architect.
Beyond its aesthetic appeal, Silestone Parisien Bleu offers outstanding performance. Its non-porous surface ensures excellent resistance to stains, impacts and intensive use, which is essential in a hospitality setting. Easy to maintain, it allows the space to retain its visual quality over time while meeting strict hygiene requirements, a key consideration for a restaurant open throughout the day.
The dining room, timeless elegance and controlled use
In the main dining room, the design language becomes more restrained and timeless. Table tops and the buffet counter are crafted in Silestone Eternal Noir, a deep black surface subtly veined, bringing structure and elegance to the space. The material creates a strong yet understated presence, reinforcing the clarity of the volumes and the overall coherence of the project.
Designed to withstand intensive use, Silestone Eternal Noir stands out for its robustness and durability. Resistant to scratches, impacts and the demands of daily service, it ensures long-term performance in a hotel restaurant setting. Its compact, easy-to-clean surface meets hygiene and maintenance requirements while maintaining a refined and stable aesthetic over time.

Through this renovation, Arnaud Doat’s work reveals an approach in which material becomes a true design instrument. Cosentino surfaces, integrated with precision, make it possible to create spaces that are both expressive and functional, capable of supporting everyday use while asserting a strong identity.
