Dekton® by Cosentino Surfaces Chosen for Renowned Restaurant, The French Laundry

The global leader in the production and distribution of surfaces for the world of architecture and design, the Cosentino Group, has been selected to provide design solutions for a number of professional kitchens and restaurants worldwide.  Owing to the numerous unique benefits for commercial applications, Dekton® by Cosentino was chosen by acclaimed chef Thomas Keller for the renovation of his California based brasserie, The French Laundry.  Keller is renowned for his culinary skills and exceptionally high standards, earning him multiple Michelin star ratings and a place on the French Legion of Honour.

Situated in the town of Yountville, Napa Valley the original structure was acquired by a French couple in the late 1920s who transformed it into a steam laundry business.  This was later converted into a restaurant in 1978, which Keller purchased in early 90s.  The name ‘The French Laundry’ remained with the aim to maintain the deep history and tradition that the building encapsulates.

Inspired by the captivating construction of the Louvre, the renovation juxtaposes the original French Laundry building against the new contemporary structure designed by Craig Dykers of Snøhetta.  The rebuild is a way to expand and modernise the existing space, redefining the future of the restaurant for the staff and guests alike.  Looking to evolve both professionally and aesthetically, it was important for the building to mirror its successes, providing opportunities and longevity for the staff.

Created from a sophisticated blend of inorganic materials using an innovative ultra-compaction process, Dekton®’s durable and easy to clean nature offers the potential for both indoor and outdoor uses including flooring, worktops and façades.  For the vast kitchen at The French Laundry, the luminous Dekton® matte-white Zenith was chosen in a 2cm thickness for the work stations with a 0.8mm thickness selected for the cladding, which covers 4000 sqft of wall space.  Due to its immense resistance to scratches, stains and heat, the revolutionary ultra-compact surface is the ideal choice for professional kitchens of this kind and in particular it was the convenience of the surfaces high heat resistance that attracted chef Keller to it. What’s more, its large format slabs allowed for a more cohesive look with less joins, whilst its impressive colour stability ensures the aesthetics will remain the same.
