The revolutionary ultra-compact surface, Dekton by Cosentino has once again proven to be the surface of choice for professional chefs, as specified by John Wheelan of The Devil’s Menu Boutique Cookery School in Kilkenny, Ireland.
Located in chef John’s own home, The Devil’s Menu Boutique Cookery School kitchen hosts cookery courses, along with chef’s table evenings and wine tastings for food lovers and those who are eager to entertain. John freshly prepares professional-style dishes and teaches guests how to cook a range of cuisines.
In order to cope with a busy service, it was paramount that the high performance appliances were matched with a quality worktop. Installed directly in the centre of the room, the island enables customers to get up close and hands on during cookery sessions and therefore needed to be suitable for both food preparation and dining. John says, “The island is the most important design feature of the kitchen. I was going to go with the traditional stainless steel look that most professional kitchens tend to use but when I was introduced to Dekton and all its advantages, I had to have it”. Eager for the kitchen to incorporate industrial designs, John selected the colour Trilium from the Industrial collection. “The look of Trilium is stunning, its appearance of oxidised steel fitted perfectly with my theme.”
Tasked with doubling as a pass as well as a seating area, the Dekton Trilium worktop offered a beautiful and practical design solution. Hot pans can be placed directly onto it without risk of discolouration or damage, which was a crucial factor for John. The use of Cosentino’s ultra compact surface also extends to the sink areas, covering the worktop and creating a stylish upstand.
John says, “It’s so surprisingly tactile, my guests often comment on the island, but they are astounded when I place hot pans or serve food directly on the worktop, it’s also easy to clean – Dekton ticks all the boxes. It’s unlike any other surface I’ve worked with before”. Dekton also boasts a high flexural strength, meaning the worktop could be fabricated with a large overhang, which enabled the generous bar-style seating area to be created. “Customers sit at the island for up to three hours as I prepare dishes so it was vital that the surface was inviting and comfortable.”
