Frydate: Frituur 2.0 door spatial design studio 5AM

Frydate, een ambitieus frituurconcept, werd geboren uit de wens om een uitrolbaar frituurmodel te ontwikkelen dat de Belgische markt zou veroveren. De oprichter streefde naar een herdefiniëring van de traditionele frituurervaring door het introduceren van zelfgemaakte snacks en sauzen. De initiële uitrol begint in 2023 in Knokke, met plannen voor de opening van 20 vestigingen in heel België. Het designteam van 5AM, in samenwerking met SKINN, kreeg de uitdaging om zowel de branding als de ruimtelijke identiteit van dit unieke concept te creëren. Het doel was om de herkenbare frituur ervaring te behouden, waarbij traditionele elementen werden geüpgraded naar een eigentijdse versie, een soort van frituur 2.0. Authentieke materialen, zoals hout, werden opnieuw gebruikt om een evenwicht te vinden tussen kwaliteit en toegankelijkheid, zonder de authenticiteit van een frituur te verliezen.

Een cruciale uitdaging voor het team was het beheer van de klantenstroom doorheen de volledige customer journey in het 450m2-grote restaurant. Omwille van de diverse bestelopties, waaronder aan de toog, via schermen, app of QR-code, werd een diepgaande analyse uitgevoerd met behulp van persona's om de ideale flow te creëren. Centraal in de zaak is het fritkot met de luifel waaronder je persoonlijk kan bestellen. Hoewel de klant een brede waaier aan bestelmogelijkheden had, was het behoud van persoonlijk contact met de friturist essentieel. Verder was een knipoog in de details van het project ook belangrijk. Zo is het ontwerpconcept geïnspireerd door de machine waarmee frietjes werden gesneden. Het vierkante snijpatroon is prominent aanwezig in plafonds, tafels en luifels. Zelfs de verlichting, die door boosterplafonds schijnt, is een knipoog naar de frietjes die door het rooster worden geduwd.

De keuze voor de zwarte Dekton Sirius van Cosentino werd enerzijds gedreven door praktische overwegingen zoals krasbestendigheid, en onderhoudsvriendelijkheid, maar anderzijds was ook de diepzwarte kleur van het Cosentino werkblad was een belangrijke factor in het beslissingsproces. Waar je bij een ander materiaal door gebruik snel kleurverschillen of vingers zou zien in de keuken en op de tafeltjes, is 5AM met Cosentino zeker dat de kleur uniform blijft. Het materiaal werd initieel vooral ingetekend in de keuken, maar nadat de klant er beter mee bekend raakte ook doorgetrokken in het restaurant voor op maat gemaakte tafels, banken en armaturen. Elementen zoals de 'table d'amis' en in verstek aangezette tafels zijn allemaal zelf ontworpen door 5AM en gaven het interieur een unieke uitstraling. De combinatie van Cosentino materialen met het authentieke concept bleek een succesvolle mix van kwaliteit en toegankelijkheid.

Met het Frydate-concept in Knokke als succesvol voorbeeld, lijkt de toekomst veelbelovend voor verdere uitbreiding en groei van het innovatieve concept. De juiste balans tussen traditionele elementen en eigentijdse uitvoering heeft Frydate gepositioneerd als een onderscheidende speler in de Belgische frituurmarkt.

5AM: Tijdloos spatial design

Olivier Caluwier begon in 2007 aan zijn interieurarchitectuurcarrière, maar stootte al snel op enkele beperkingen in de sector. Als antwoord hierop startte hij in 2011 zijn eigen studio, 5AM, in Kortrijk. Wat begon als een zoektocht naar creatieve vrijheid groeide uit tot een gerenommeerd spatial design bureau met een duidelijke missie: unieke concepten creëren die de identiteit van hun opdrachtgevers weerspiegelen. Met 12 teamleden en kantoren in zowel Brugge als Antwerpen, heeft 5AM zich gevestigd als een toonaangevend ontwerpbureau in hospitality, winkels, showrooms en kantoren.

Een van de opvallende projecten die 5AM in de schijnwerpers plaatste, was de transformatie van zeecontainers naar een kantoor in Kortrijk. Dit innovatieve concept leverde internationale erkenning op en bepaalde de koers voor toekomstige projecten. Het succes van 5AM ligt in hun vermogen om niet slechts te decoreren, maar volledige plannen te ontwikkelen, beginnend met duidelijke concepten die naadloos aansluiten bij de missie, visie, en waarden van de bedrijven waarmee ze samenwerken. Door zich volledig in te leven in de sfeer en missie van hun klanten, hebben ze zelf geen vastgestelde stijl. Dit is dan ook hun onderscheidende factor; waar andere ontwerpbureaus hun naam willen plakken op het design, gaat 5AM zich zo flexibel mogelijk opstellen en de bedrijfsidentiteit omzetten tot een ‘spatial identity’. Hun samenwerking met branding agency SKINN zorgt voor een naadloze doorloop van de ruimtelijke identiteit naar de bedrijfsidentiteit. Hierdoor is ook hun portfolio divers en uniek, met een focus op flexibiliteit, modulariteit, en duurzaamheid.

Aangezien de voornaamste klanten van 5AM bestaan uit bedrijven en de hospitality sector, is de materiaalkeuze van hun ontwerpen cruciaal. Daarom werkt 5AM graag met Dekton van Cosentino; bekend om zijn onderhoudsvriendelijkheid en veelzijdigheid. 5AM gaat verder dan conventioneel gebruik en zoekt constant naar nieuwe mogelijkheden, patronen, en prints om materialen een extreem grafische uitstraling te geven. Het ontwerpbureau heeft hun branding en design talent toegepast op het frituurconcept Frydate, waarbij Dekton de hoofdrol speelt in zowel de werktoog als de eettafels, wat resulteert in een unieke en moderne uitstraling.

De toekomst van 5AM ziet er veelbelovend uit, met voortdurende betrokkenheid bij kantoorprojecten en een groeiende focus op de hospitalitysector, zoals recentelijk bewezen met een duurzaam hotelproject in Oostende en hotels in Brussel en Roeselare in de pipeline. 5AM is geen standaard interieurarchitectenbureau, maar een spatial designbureau dat de grenzen van ontwerp uitdaagt, innovatie omarmt en unieke ruimtelijke identiteiten creëert die resoneren met de kernwaarden van hun opdrachtgevers. Met een oog op duurzaamheid, flexibiliteit en vernieuwing blijft 5AM een inspirerende speler in de wereld van spatial design.

A restaurant with an open and seamless design in Tel Aviv

The design of the new Grill Bar in Tel Aviv was a great challenge for interior designer Racheli Ben Avi. The aim was to create a seamless space that would offer clients a sensory experience through its atmosphere. “The biggest challenge of the project was planning the restaurant space. The idea was to create an open space that would encourage a natural and dynamic flow, allowing visual connection between the different parts of the space”, explains the designer. In addition to this, the combination of several different styles posed the challenge of maintaining a well-balanced and refined design.

“The eclectic style was achieved by integrating industrial materials, an exposed black painted ceiling, bronze light fixtures, a wine display cabinet, green plants and a brightly coloured pop art piece in the cladding”, she explains. To merge all these different elements, Racheli Ben Avi opted for Cosentino materials. The entire restaurant is clad in Dekton, including the bar counter, walls, cabinets and floor.

Inspired by nature

“My inspiration for the planning and design of the restaurant was nature itself. Its colours and intensity were my starting point”, says Racheli Ben Avi. The textures of Dekton gave the project that natural touch. Dekton Laos was used for the bar top. Its dark matt shades together with its weathered look reinterpret industrial design. This colour was combined with the luxuriant Dekton Trilium for a contemporary design. Inspired by volcanic stones, the colour mix of Trilium adds touches of deep grey and black shades. Bromo, a dark grey colour with a natural texture, has been used on the floor, thus rounding off the design.

Designed to last

“The planning and design of the project started with the selection of materials”, says the designer. Since it is a restaurant, it was important that all materials were durable, something that the Dekton colours chosen for the project guarantee. Without compromising on design and beauty, Racheli Ben Avi opted for Dekton’s technical properties to ensure durability. In addition to its resistance to stains and scratches, it is a very easy to clean surface, hygienic and perfect for food contact, thus meeting all the requirements of a catering establishment such as this one.

The new look of the Meliá Hotel in Milan

After the complete redesign of several areas, including the lobby, restaurant, meeting rooms and bathrooms, one of the landmark hotels in the Italian city of Milan is sporting a fresh new look. The renovation, carried out jointly by Spanish architect Álvaro Sans and Vittorio Grassi Architects, has given a new look to the Meliá Milano, a hotel located in Via Masaccio, very close to the trendy area known as City Life, the new centre of luxury shopping in the city.

The functional and architectural approach of the renovation project led to the rebirth of this 20-year-old hotel, opening up spaces by creating a new, spacious and flexible layout of the common areas. The interior gardens, high skylights and contemporary use of materials and textures give the bar, restaurant and co-working area a sophisticated feel.

A chic colour

Style and functionality are the main elements of this project in which natural materials such as marble, wood and green shades have been combined with Cosentino surfaces. Specifically, Silestone Eternal Marquina was used for the cladding and countertops of the bathrooms, the alcoves and furniture in the meeting rooms, and the worktops and several tables in the buffet and bar area. “The Suede finish creates a unique feeling of comfort”, says Vittorio Grassi. “Furthermore, its appearance, imitating the veins and nuances of precious exotic marbles, fits well with the Spanish marbles in the common areas and the style of Vescom’s fire retardant curtain fabrics”, he further says.

In addition to the Suede finish, polishing has been applied in the bathroom area. “Functionality is a key element of hotel management and, in the case of business accommodation, bathroom areas can get very crowded”, explains the architect. “The Silestone wall claddings in a glossy finish allowed us to achieve the style we were looking for but with an ease of maintenance that meets the hygiene standards you would expect in a five star hotel”, he adds. As a result, the combination of luxury, beauty and technical properties for high traffic areas is perfect.

Relaxed spaces with natural materials

The newly built hotel Scandic CPH Strandpark presents itself as a relaxed and welcoming meeting point in an ideal location. Halfway between Oresund, Copenhagen airport and the Danish capital, it offers privileged views and the beautiful backdrop of the local beach. It is the first hotel in the Scandic chain to focus on the brand’s new strategy of targeting a specific new design-loving guest.

Designed by the architecture and design studio Koncept, the project maintains a relaxed and open character in its design and interior design. It combines natural materials, such as Scandinavian wood, rope and rattan, with durable, recycled surfaces to suit the interior design trends of the future. In particular, Dekton and Silestone have been used to add character and functionality to spaces.

Functionality and aesthetics, two added values

‘We chose Silestone mainly because the table tops had to be durable, easy to maintain and clean in the restaurants, lounges, rooms and rooftop bar,’ Vera Arvidsson from Koncept explains. ‘And because it is resistant to heat and the constantly changing Scandinavian weather, Dekton works perfectly in the open kitchen and on the outdoor terraces,’ she continues. All these technical features also have the added value of sustainability, which reinforces the concept of the hotel itself, as the surfaces are made from recycled materials.

Multiple applications

Specifically, light sand-coloured Dekton Danae in matt finish has been used for the kitchen worktops, buffet and outdoor tables. Meanwhile, the coffee tables in the lounges, as well as the tables in the restaurant and skybar, are made of Silestone Coral Clay. Conversely, Silestone Eco Luna 14 – customised for this project and in Polished finish – has been used for the desks in the rooms, the worktops in the bars, the tables in the lounges and the conference room, all custom-designed by Koncept. In keeping with these materials, the window sills in the rooms feature a beautiful natural stone of travertine marble.

The perfect design for a multi-purpose restaurant in Turkey

The concept of Hayal Kahvesi, a restaurant chain in Turkey, goes beyond serving lunch and dinner, as it turns into a concert hall at night. And in keeping with this multi-disciplinary concept, one of its premises in Istanbul has been refurbished. ‘During the day it is a good place to eat and to meet. At night, it turns into a club-lounge,’ explain the architects and interior designers working with Tanya Ildiroğlu and her studio Margo Interior and Product Design on the project.

The entire design revolves around both experiences and tries to meet the needs of the customers. ‘We are organic beings, who need food to nourish the body and music to nourish the soul. We live in one of the largest metropolises and have to deal with a lot of hustle and bustle. Therefore, one of the objectives was for the interior design to be able to restore all of the negativity of the day and turn it into something positive,’ the designers explain.

Project challenges

Thus, from the vibrant and eye-catching variety of colours chosen to the lighting that accompanies both stages (day and night), everything revolves around the show, be it culinary or musical. In fact, one of the challenges was sound insulation, as the premises are located on the ground floor of a residential building. The potential traffic at this venue was another key consideration when designing a facility that could withstand heavy footfall and require easy maintenance. ‘This was why we chose Cosentino,’ the studio explains. ‘This place faces heavy traffic and we needed to keep all surfaces in good condition, as on day one, with no stains or wear and tear.’

A variety of textures and colours

The restaurant is split into different areas that are distinguished by their design, starting from the lighting and continuing with the table tops. ‘Thanks to Cosentino we were able to use rich combinations of colours, textures and patterns,” the design studio points out. While the dark and elegant Silestone Arden Blue in Volcano finish was used for the bathroom countertops, the tables and worktops in the lounges feature Dekton colours from the Natural Collection series. Lightweight tables with soft and subtle coloured tops in Dekton Vegha and Kairos are combined with bold tables in Dekton Keyla, an aesthetically powerful colour inspired by black marble.

Caffè Tarentum reopens its doors

In the Italian city of Taranto, Apulia, there is a legendary meeting place that is now coming back to life after the renovation carried out by the architect Lello Nigro. Caffè Tarentum is a historic café restaurant that has been run by the same family for 35 years. The owners want to freshen up this place that offers coffee, pastries and home-made ice cream.

This renovation, carried out by Scrimieri Lab under the supervision of Nigro, aimed to create a warm, welcoming, restrained but elegant space. Materials such as Canaletto Walnut, Dekton by Cosentino and an array of natural matt lacquered finishes have been used to add a sophisticated and very comfortable character to the café.

Dark marble with an elegant soul

Dekton Kelya was chosen for the bar top, tables, wall cladding and the background of the brand logo. The front band of the worktop also runs along the main hall, and continues to clad the service access doors in this stylish colour. Inspired by dark marble with light veins, Kelya gives a special and personal touch to this space.

The perfect material for a café restaurant

Keyla is the perfect material for surfaces such as the tables and bar of this café restaurant, as it ensures durability and a flawless appearance. It is highly scratch and stain resistant, easy to maintain and withstands high temperatures without damaging its surface.

One of the largest hotels in Finland

The former Finnish State Railways VR headquarters building, originally designed by Eliel Saarinen and completed in 1909, has been transformed into a Scandic Hotel. The building is strongly tied to Helsinki’s railway station, an important part of the cityscape as well as culturally and historically significant, as it served as the railway administration headquarters for almost a century. The design work on the hotel was exceptionally demanding. The building is protected under the Act on the Protection of the Built Heritage.

Representing Eliel Saarinen’s Art Nouveau style, the former Finnish State Railways VR headquarters building was renovated and expanded into an elegant hotel with almost 500 rooms as well as meeting and event facilities. The cultural and historical landmark’s demanding renovation and change of use was carried out in cooperation with the Finnish Heritage Agency and the city of Helsinki.

The renovation was an exceptionally demanding project. Protected parts of the building include its entire exterior and roofing, as well as its main lobby, main staircase and hallways, the longest of which is 159 metres long.

Silestone, between the elegance and the versatility

The building’s extension was built according to the design proposition from the architectural office Futudesign, which won an architecture contest for this project in 2017. The new extension completes the elegant hotel complex, which also includes a beautiful courtyard and an outdoor terrace for the restaurant.

Taking care of every last detail from the plate to the table

Food as a language of love. This is how renowned chef Aitor Jerónimo Orive sums up his passion for gastronomy, heritage of his homeland, the Basque Country, a region in northern Spain. “My grandparents are wonderful cooks and I always caught them in the kitchen, stirring a pot of hot, hearty and incredibly delicious food”, Aitor recalls. For Aitor, the logical step was to become a chef and open his own culinary space. So far, nothing unusual. Except that he opened his restaurant in Singapore, more than 11,000 kilometres away from home. It was there that he opened the Basque Kitchen, a Michelin-starred restaurant where Basque cuisine has become part of international cultural heritage.

Now, after several years of hard work that have earned him the appreciation of the general public, the Basque Kitchen by Aitor moves to the historic building The Fullerton Waterboat House, and does so under the guidance of the design studio Grey Matters, featuring Dekton as the reference material. “Moving from Amoy Street to its new location was a bold move that required careful planning. Redefining a brand that has such history and so much prestige is a task that must be handled with delicacy, sensitivity and the utmost care so as not to undermine all the hard work that the Chef and his team have put in over the last few years”, explains the studio.

Dekton Keyla and Silestone Eternal D’or

The design was to be minimal, bespoke and ultra luxurious. The choice of Cosentino’s surfaces, Dekton Kelya and Silestone Eternal D’Or, for the bar and cabinets was a logical step that improved both the performance of the space and the visual quality of the design. The result is a well-balanced palette of materials that creates a luxurious setting with high performance kitchen and bar areas that allow the Chef and his team to shine.

Beyond their design and finishes, both Dekton and Silestone provide highly resistant and easy to maintain surfaces that are perfect for kitchens, whether at home or in Michelin-starred restaurants, where the pace of work is hectic and each space must be planned to the millimetre.
